Air Fryer Chicken Thighs — Bone-In or Boneless
Boneless thighs cook at 400°F for 12–15 minutes. Bone-in thighs take 22–25 minutes at 400°F, flipped once at the halfway mark. The bone is the whole difference: it slows the heat reaching the middle, so a bone-in thigh always needs the longer end of that range.
Safe is 165°F. But thighs are the one chicken cut where safe and best aren't the same number, and that gap is the part most recipe pages skip.
So this page covers the two things a printed time won't tell you. Why you should take dark meat past 165°F on purpose, to 175–185°F, and what changes when you do. And the adjustment nobody makes when their air fryer is the tall oven-style kind instead of a basket drawer.

Thighs come four ways, and the split matters more than the seasoning does. Bone-in or boneless changes the time. Skin-on or skinless changes whether you get crisp or just cooked. The chart is broken out along both.

These are sourced starting points for a basket-style fryer, not a tested log — I treat any printed time as a guess to check against, never the thing that ends the cook. My reference unit is a Platinum 7.6L basket-style (AF-800B-W, 2000W). The thing that ends the cook is the thermometer, not the clock.
Take thighs past 165°F on purpose
Everyone knows chicken is safe at 165°F. That number, from the USDA, is 165°F / 74°C for all poultry, and it is a floor, not a target. It's the point at which the meat is safe to eat. For a chicken breast, it's also roughly where you want to stop, because white meat past that dries out fast.
Thighs are not breast. Dark meat is laced with connective tissue and fat that a breast doesn't have. That tissue is mostly collagen, and collagen doesn't soften until the meat climbs well past safe — it starts breaking down into gelatin in the 170s and keeps going into the low 180s. Gelatin is what makes a thigh taste rich and silky instead of bouncy and firm.
So pull a thigh at exactly 165°F and it's safe, but it can still be a little springy and tight. Take it to 175–185°F and the collagen has rendered, the fat has loosened, and the meat pulls apart softly while staying juicy. This is the opposite of what happens to breast. Dark meat gets better in the range where white meat falls apart.
In my experience this single habit — ignoring the 165°F stopping point and going to the high 170s — does more for how a thigh eats than any marinade. The one caution: 165°F is still the safety line, so never pull under it. Above it, you're cooking for texture, and thighs reward the extra few minutes.
Safe is 165°F. Good is 175–185°F.
Only for dark meat. Thighs and drumsticks have the collagen that needs the higher heat to turn tender. Do this to a chicken breast and you get dry meat. Keep an instant-read thermometer in the drawer and cook thighs to feel, not to the minimum.
Basket-style vs oven-style — the adjustment nobody makes
Almost every thigh recipe was written on one machine and quietly assumes you own the same one. You probably don't, and thighs show the gap because they cook long enough for it to add up.
A basket drawer sits the thighs close to the element in a tight space, so it runs hot and cooks quickly. An oven-style unit has far more internal air to heat, so the same thighs usually need roughly 2 to 5 minutes longer to reach the same colour and the same internal temp. Follow a basket recipe to the minute on an oven-style machine and you pull pale, underdone thighs and blame the recipe.
The times above came off a basket-style unit. If yours is the tall oven kind, start checking at the top of each range and expect to add a few minutes. As always, the thermometer settles it — colour and internal temp, never the clock alone.
Skin: dry it, or don't bother
Skin-on thighs are worth it, but only if the skin crisps. Wet skin steams. Hot air hits the surface moisture, turns it to steam, and the skin poaches soft before it ever browns. Pat every thigh dry with paper towel, both sides, before it goes in.
Lay them skin-side down for the first stretch, then flip so the skin faces the airflow for the finish. A cold, damp start is the usual reason skin comes out soft and rubbery. When the oven wins
I'll send you away from the air fryer when it's the right call. Thighs are one of those cases at scale. A basket holds four to six thighs in a single layer, and single layer is not optional — crowd them and the airflow dies. So if you're cooking bone-in thighs for four or more people, you're running three or four batches, and the first is stone cold by the time the last comes out.
For a crowd, one tray in the oven beats babysitting batches. The air fryer is at its best doing a single layer for one or two people, where it's faster than heating a whole oven and the skin comes out better. Match the tool to the batch.
What goes wrong, and the fix
- Springy, firm thighs: you pulled at 165°F. Take dark meat to 175–185°F so the collagen renders.
- Rubbery, pale skin: wet skin. Pat it fully dry, and finish skin-side up in the airflow.
- Cooked outside, pink at the bone: bone-in thighs need the longer time. Probe right next to the bone, where it's slowest.
- Pale after the full time: either an overcrowded basket or an oven-style unit on a basket recipe. Single layer, and add a few minutes on oven-style.
- Dry, stringy boneless thighs: overshot well past 185°F, or the pieces were thin. Check thin thighs early and pull in the 175–180°F window.
